- 8 oz cream cheese, softened
- 1 cup shredded cheese (e.g., cheddar or pepper jack)
- 1/2 cup cooked bacon bits
- 2 cloves fresh garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp salt
- Black pepper, to taste
Instructions
- Preheat your smoker or grill to 225°F. Wash and slice the jalapeños in half lengthwise, scooping out seeds and membranes.
- In a mixing bowl, combine cream cheese, shredded cheese, bacon bits, garlic, smoked paprika, salt, and black pepper until smooth.
- Fill each jalapeño half generously with the cheese mixture.
- Place stuffed jalapeños on the grill or in a smoker and smoke for about 15 minutes until tender and bubbly.
- Remove from the grill, let cool for a few minutes, then serve warm.
Notes
Adjust spice by removing seeds for milder poppers or using hotter jalapeños. Can freeze before cooking for later use.
