Ingredients

  • 10 fresh jalapeño peppers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheese (e.g., cheddar or pepper jack)
  • 1/2 cup cooked bacon bits
  • 2 cloves fresh garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • Black pepper, to taste

Instructions

  1. Preheat your smoker or grill to 225°F. Wash and slice the jalapeños in half lengthwise, scooping out seeds and membranes.
  2. In a mixing bowl, combine cream cheese, shredded cheese, bacon bits, garlic, smoked paprika, salt, and black pepper until smooth.
  3. Fill each jalapeño half generously with the cheese mixture.
  4. Place stuffed jalapeños on the grill or in a smoker and smoke for about 15 minutes until tender and bubbly.
  5. Remove from the grill, let cool for a few minutes, then serve warm.

Notes

Adjust spice by removing seeds for milder poppers or using hotter jalapeños. Can freeze before cooking for later use.
