Instructions
- Prepare the smoker by heating it to 225°F (107°C).
- Wash and dry the russet potatoes.
- Rub each potato lightly with olive oil and season generously with salt and pepper.
- Place the potatoes directly on the smoker grates.
- Smoke the potatoes for 1 hour and 15 minutes, or until they reach an internal temperature of 205°F (96°C).
- For crispier skin, bake in a preheated oven at 425°F (218°C) for an additional 15 minutes.
- Remove from heat, let cool slightly, and add your favorite toppings before serving.
Notes
Rest the potatoes for a few minutes after smoking for easier slicing. Use fresh herbs for added flavor.
