  5. Smoke the potatoes for 1 hour and 15 minutes, or until they reach an internal temperature of 205°F (96°C).
  6. For crispier skin, bake in a preheated oven at 425°F (218°C) for an additional 15 minutes.
  7. Remove from heat, let cool slightly, and add your favorite toppings before serving.

Notes
