Description

Hearty and comforting unstuffed cabbage rolls cooked in a slow cooker, perfect for busy nights.


Ingredients

Scale
  • 1 to 1.5 pounds ground beef (or turkey)
  • 1 small onion, chopped
  • 3 to 4 cloves garlic, minced
  • 1 small head of green cabbage, chopped
  • 1 can crushed tomatoes (about 28 ounces)
  • 1 can tomato sauce (about 15 ounces)
  • 2 to 3 tablespoons tomato paste (optional)
  • 1 to 1.5 cups beef broth or water
  • 1 to 2 teaspoons salt, plus pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano or Italian seasoning
  • 1 tablespoon brown sugar (optional)
  • 2 to 3 cups cooked rice, stirred in at the end

Instructions

  1. If browning the meat, cook it in a skillet with the onion until no longer pink. Add garlic for the last 30 seconds. Drain excess grease.
  2. Add cabbage to the slow cooker.
  3. Add the meat mixture, then pour in crushed tomatoes, tomato sauce, broth, and seasonings. Stir lightly.
  4. Cook on low for 6 to 8 hours or on high for 3 to 4 hours, until cabbage is very tender.
  5. Stir in cooked rice and let sit for 10 to 15 minutes. Taste and adjust seasoning.

Notes

For best flavor, brown the meat first and add a splash of vinegar before serving for brightness.
