Description
Hearty and comforting unstuffed cabbage rolls cooked in a slow cooker, perfect for busy nights.
Ingredients

- 1 to 1.5 pounds ground beef (or turkey)
- 1 small onion, chopped
- 3 to 4 cloves garlic, minced
- 1 small head of green cabbage, chopped
- 1 can crushed tomatoes (about 28 ounces)
- 1 can tomato sauce (about 15 ounces)
- 2 to 3 tablespoons tomato paste (optional)
- 1 to 1.5 cups beef broth or water
- 1 to 2 teaspoons salt, plus pepper to taste
- 1 teaspoon paprika
- 1 teaspoon dried oregano or Italian seasoning
- 1 tablespoon brown sugar (optional)
- 2 to 3 cups cooked rice, stirred in at the end
Instructions
- If browning the meat, cook it in a skillet with the onion until no longer pink. Add garlic for the last 30 seconds. Drain excess grease.
- Add cabbage to the slow cooker.
- Add the meat mixture, then pour in crushed tomatoes, tomato sauce, broth, and seasonings. Stir lightly.
- Cook on low for 6 to 8 hours or on high for 3 to 4 hours, until cabbage is very tender.
- Stir in cooked rice and let sit for 10 to 15 minutes. Taste and adjust seasoning.
Notes
For best flavor, brown the meat first and add a splash of vinegar before serving for brightness.
