Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes, chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups fresh spinach

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Place the seasoned chicken in the slow cooker and scatter the cherry and sun-dried tomatoes on top.
  3. In a bowl, whisk together the chicken broth, garlic, basil, oregano, and heavy cream, then pour over the chicken and tomatoes.
  4. Set the slow cooker to low for 6 hours or high for 4 hours.
  5. About 30 minutes before serving, stir in the fresh spinach.
  6. Serve over pasta, rice, or with crusty bread.

Notes

For a healthier option, substitute heavy cream with Greek yogurt or coconut cream. Rest the chicken before slicing for juiciness.
