- 4 boneless, skinless chicken breasts
- 2 cups cherry tomatoes
- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- ½ cup sun-dried tomatoes, chopped
- 3 cloves of garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups fresh spinach
Instructions
- Season the chicken breasts with salt and pepper.
- Place the seasoned chicken in the slow cooker and scatter the cherry and sun-dried tomatoes on top.
- In a bowl, whisk together the chicken broth, garlic, basil, oregano, and heavy cream, then pour over the chicken and tomatoes.
- Set the slow cooker to low for 6 hours or high for 4 hours.
- About 30 minutes before serving, stir in the fresh spinach.
- Serve over pasta, rice, or with crusty bread.
Notes
For a healthier option, substitute heavy cream with Greek yogurt or coconut cream. Rest the chicken before slicing for juiciness.
