Ingredients

  • 4 boneless pork chops (about 1 inch thick)
  • Salt and freshly ground black pepper
  • 1 tablespoon olive oil
  • 4 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 cup freshly grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1 tablespoon Dijon mustard
  • 2 teaspoons cornstarch mixed with 2 tablespoons cold water
  • Fresh parsley or basil, chopped, for garnish

Instructions

  1. Season the pork chops generously with salt and pepper on both sides. Let them rest for 10 minutes for even cooking.
  2. Heat olive oil in a skillet over medium-high heat and sear pork chops for 1 to 2 minutes per side until lightly browned.
  3. Transfer the chops to the slow cooker.
  4. Add a touch more oil if needed and sauté the minced garlic for 30 seconds until fragrant.
  5. Pour in chicken broth and scrape up any browned bits from the skillet.
  6. Stir in the heavy cream, Dijon mustard, Italian seasoning, and half the Parmesan cheese.
  7. Pour the mixture over the pork chops in the slow cooker.
  8. Cover and cook on low for 3 to 4 hours, or on high for 1.5 to 2 hours.
  9. Lift the chops out and set aside when done. Mix the cornstarch slurry into the sauce in the slow cooker, stirring gently.
  10. Cook on high for 5 to 10 minutes until the sauce thickens.
  11. Return pork chops to the sauce to coat and garnish with fresh parsley or basil before serving.

Notes

For a lighter sauce, substitute half the cream with Greek yogurt. Serve with mashed potatoes or buttered egg noodles.
