An indulgent slow cooker recipe with tender pork chops in a creamy garlic Parmesan sauce, perfect for busy weeknights and family meals.

- 4 boneless pork chops (about 1 inch thick)
- Salt and freshly ground black pepper
- 1 tablespoon olive oil
- 4 cloves fresh garlic, minced
- 1 cup low-sodium chicken broth
- 1 cup heavy cream or half-and-half
- 1 cup freshly grated Parmesan cheese
- 2 teaspoons Italian seasoning
- 1 tablespoon Dijon mustard
- 2 teaspoons cornstarch mixed with 2 tablespoons cold water
- Fresh parsley or basil, chopped, for garnish
Instructions
- Season the pork chops generously with salt and pepper on both sides. Let them rest for 10 minutes for even cooking.
- Heat olive oil in a skillet over medium-high heat and sear pork chops for 1 to 2 minutes per side until lightly browned.
- Transfer the chops to the slow cooker.
- Add a touch more oil if needed and sauté the minced garlic for 30 seconds until fragrant.
- Pour in chicken broth and scrape up any browned bits from the skillet.
- Stir in the heavy cream, Dijon mustard, Italian seasoning, and half the Parmesan cheese.
- Pour the mixture over the pork chops in the slow cooker.
- Cover and cook on low for 3 to 4 hours, or on high for 1.5 to 2 hours.
- Lift the chops out and set aside when done. Mix the cornstarch slurry into the sauce in the slow cooker, stirring gently.
- Cook on high for 5 to 10 minutes until the sauce thickens.
- Return pork chops to the sauce to coat and garnish with fresh parsley or basil before serving.
Notes
For a lighter sauce, substitute half the cream with Greek yogurt. Serve with mashed potatoes or buttered egg noodles.
