A cozy and effortless dinner featuring tender beef bites and buttery garlic potatoes, all cooked in the slow cooker.
Ingredients

- 2 to 2.5 pounds beef stew meat or sirloin, cut into bite-size pieces
- 1.5 pounds baby potatoes or chopped Yukon Golds
- 6 tablespoons butter
- 4 to 6 cloves garlic, minced (or more, if desired)
- 3/4 cup beef broth
- 1 tablespoon Worcestershire sauce
- Salt and black pepper to taste
- Onion powder or 1 chopped onion (optional)
- Italian seasoning or dried thyme (optional)
- 1 tablespoon cornstarch (optional, for thicker sauce)
- Fresh parsley for garnish (optional)
Instructions
- Prep the slow cooker by spraying the inside with cooking spray or rubbing it with a little butter.
- Add the potatoes to the bottom of the slow cooker.
- Top the potatoes with seasoned beef, using salt and pepper, and onion powder if desired.
- In a pan, melt the butter and mix in minced garlic, Worcestershire sauce, and beef broth. Add herbs if desired.
- Pour the garlic butter mixture over the beef and potatoes and cover with a lid.
- Cook on LOW for 6 to 7 hours or HIGH for about 3 to 4 hours.
- If a thicker sauce is desired, mix cornstarch with cold water and stir it in during the last 20 to 30 minutes.
- Taste and adjust seasoning, garnish with parsley, and serve warm.
Notes
For best results, choose beef with some marbling and cut larger potatoes in half for even cooking. You can also add vegetables like carrots or mushrooms depending on your preference.
