Ingredients

  • 1 lb ground beef
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 28 oz canned tomatoes, diced
  • 1 can kidney beans, drained and rinsed
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Prep the Ingredients: Dicing the onion and peppers, and mincing the garlic.
  2. Brown the beef: In a skillet over medium heat, cook the ground beef until browned.
  3. Combine in the Slow Cooker: Transfer the browned beef to the slow cooker. Add the onions, garlic, bell peppers, canned tomatoes, kidney beans, and beef broth.
  4. Season: Sprinkle in chili powder, cumin, salt, and pepper. Stir gently to combine.
  5. Set It and Forget It: Cover and set your slow cooker to low for 6-8 hours, or high for 4 hours.
  6. Final Touches: Before serving, taste and adjust seasonings, adding lime or hot sauce if desired.
