- 1 lb ground beef
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 28 oz canned tomatoes, diced
- 1 can kidney beans, drained and rinsed
- 1 cup beef broth
- 2 tbsp chili powder
- 1 tsp ground cumin
- Salt and pepper to taste
Instructions
- Prep the Ingredients: Dicing the onion and peppers, and mincing the garlic.
- Brown the beef: In a skillet over medium heat, cook the ground beef until browned.
- Combine in the Slow Cooker: Transfer the browned beef to the slow cooker. Add the onions, garlic, bell peppers, canned tomatoes, kidney beans, and beef broth.
- Season: Sprinkle in chili powder, cumin, salt, and pepper. Stir gently to combine.
- Set It and Forget It: Cover and set your slow cooker to low for 6-8 hours, or high for 4 hours.
- Final Touches: Before serving, taste and adjust seasonings, adding lime or hot sauce if desired.
