Ingredients

  • 1.5 lbs beef chuck roast, cut into bite-sized cubes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream
  • Salt and pepper to taste
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Trim excess fat from the beef chuck roast and cut it into bite-sized cubes.
  2. In a skillet over medium heat, brown the beef cubes for 4-5 minutes until golden on the edges (optional).
  3. Add the chopped onion, garlic, mushrooms, and browned beef to the slow cooker.
  4. In a separate bowl, mix the beef broth, Worcestershire sauce, Dijon mustard, salt, and pepper. Pour this mixture over the beef and vegetables.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the beef is fork-tender and the flavors are well combined.
  6. Stir in the sour cream just before serving, allowing it to meld with the sauce.
  7. Ladle the stroganoff over egg noodles or your choice of starch, and garnish with fresh parsley.

Notes

For a healthier option, use lean cuts of meat or add more vegetables. This dish can also be made ahead of time.
