- 1.5 lbs beef chuck roast, cut into bite-sized cubes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 cups beef broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 cup sour cream
- Salt and pepper to taste
- Optional: Fresh parsley, chopped, for garnish
Instructions
- Trim excess fat from the beef chuck roast and cut it into bite-sized cubes.
- In a skillet over medium heat, brown the beef cubes for 4-5 minutes until golden on the edges (optional).
- Add the chopped onion, garlic, mushrooms, and browned beef to the slow cooker.
- In a separate bowl, mix the beef broth, Worcestershire sauce, Dijon mustard, salt, and pepper. Pour this mixture over the beef and vegetables.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until the beef is fork-tender and the flavors are well combined.
- Stir in the sour cream just before serving, allowing it to meld with the sauce.
- Ladle the stroganoff over egg noodles or your choice of starch, and garnish with fresh parsley.
Notes
For a healthier option, use lean cuts of meat or add more vegetables. This dish can also be made ahead of time.
