- 2 cups bell peppers (any colors)
- 1 large onion
- 3 cloves fresh garlic (minced)
- 1 cup beef broth (low-sodium)
- 1 can diced tomatoes (14 ounces)
- 1 tablespoon soy sauce (or tamari)
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
Instructions
- Prepare the Veggies: Wash and slice bell peppers into strips and dice the onion.
- Sear the Beef (optional): Sear the beef on all sides for about 5 minutes in a pan with olive oil.
- Layer Ingredients: In the slow cooker, layer the beef at the bottom, followed by bell peppers and onions.
- Add Aromatics: Sprinkle garlic, paprika, Italian seasoning, salt, and pepper on top.
- Pour in Liquids: Add beef broth, diced tomatoes, soy sauce, and Worcestershire sauce; stir gently.
- Set It to Cook: Cover and set slow cooker to low for 6-8 hours or high for 4-5 hours.
- Finish and Serve: Once done, the beef should be tender. Serve warm.

For lighter options, use lean beef, turkey, or chicken. Add vegetables or spices as desired.
