Description

A warm and hearty slow cooker soup made with creamy potatoes, crispy bacon, and zesty ranch seasoning.


Ingredients

  • 5 medium potatoes, peeled and diced
  • 6 slices of crispy bacon, cooked and crumbled
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 packet ranch dressing mix
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. In your slow cooker, combine the diced potatoes and crumbled bacon.
  2. Pour in the chicken broth and sprinkle the ranch dressing mix over the top. Mix gently to coat the potatoes.
  3. Secure the lid and set your slow cooker to low for 4 hours.
  4. After 4 hours, stir in the heavy cream and allow it to cook for an additional 30 minutes.
  5. Once it’s done, taste and season with salt and pepper as needed.
  6. Serve hot, topped with shredded cheddar cheese and green onions.

Notes

For a lighter option, use half-and-half instead of heavy cream or coconut milk for a dairy-free version. You can also use turkey bacon or sautéed mushrooms for a vegetarian twist.
