Description

A delightful dish of shrimp sautéed in a garlic-infused buttery sauce, enveloped in silky orzo pasta. Perfect for busy weeknights or festive gatherings.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 4 cloves garlic, minced
  • 1/2 cup white wine
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/4 cup parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring salted water to a boil, and add the orzo. Cook according to package directions until al dente, about 8-10 minutes. Once cooked, drain and set aside, reserving a cup of pasta water.
  2. In a large skillet over medium heat, add olive oil and two tablespoons of butter. Once melted, add minced garlic, and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  3. Toss the shrimp into the skillet. Cook for about 2-3 minutes per side or until they turn pink and opaque.
  4. Carefully pour in the white wine, scraping any bits from the bottom of the pan. Let it simmer for about 3-4 minutes, allowing the alcohol to evaporate and the sauce to reduce slightly.
  5. Stir in the cooked orzo, lemon juice, remaining butter, and chopped parsley. Mix well, adding reserved pasta water a little at a time until you reach your desired creaminess.
  6. Taste and season with salt and pepper.
  7. Serve warm, garnished with extra parsley and a sprinkle of lemon zest if desired.

Notes

For a healthier option, replace some butter with Greek yogurt. Seasonal additions like cherry tomatoes and spinach can enhance the dish.
