Description
A delightful dish of shrimp sautéed in a garlic-infused buttery sauce, enveloped in silky orzo pasta. Perfect for busy weeknights or festive gatherings.

- 1 pound shrimp, peeled and deveined
- 1 cup orzo pasta
- 4 cloves garlic, minced
- 1/2 cup white wine
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/4 cup parsley, chopped
- Salt and pepper to taste
Instructions
- In a large pot, bring salted water to a boil, and add the orzo. Cook according to package directions until al dente, about 8-10 minutes. Once cooked, drain and set aside, reserving a cup of pasta water.
- In a large skillet over medium heat, add olive oil and two tablespoons of butter. Once melted, add minced garlic, and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Toss the shrimp into the skillet. Cook for about 2-3 minutes per side or until they turn pink and opaque.
- Carefully pour in the white wine, scraping any bits from the bottom of the pan. Let it simmer for about 3-4 minutes, allowing the alcohol to evaporate and the sauce to reduce slightly.
- Stir in the cooked orzo, lemon juice, remaining butter, and chopped parsley. Mix well, adding reserved pasta water a little at a time until you reach your desired creaminess.
- Taste and season with salt and pepper.
- Serve warm, garnished with extra parsley and a sprinkle of lemon zest if desired.
Notes
For a healthier option, replace some butter with Greek yogurt. Seasonal additions like cherry tomatoes and spinach can enhance the dish.
