Instructions
- Boil the Eggs: Place the eggs in a pot, cover with cold water, bring to a boil, then cover and let sit for 10-12 minutes. Transfer to an ice bath.
- Cook the Shrimp: Heat a drizzle of olive oil in a skillet over medium heat, add shrimp, season with salt and pepper, and cook for 3-4 minutes on each side until pink and opaque.
- Prepare the Vegetables: Slice the cherry tomatoes and red onion, then place in a large bowl with mixed greens.
