- 8 oz linguine pasta
- 1 lb shrimp, peeled and deveined
- 3 cloves garlic, minced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup white wine
- 2 tbsp olive oil
- Juice of 1 lemon
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
Instructions
- Cook the Linguine: Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
- Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until golden brown, about 1-2 minutes.
- Add the Shrimp: Toss in the shrimp and cook until they turn pink and opaque, about 3-4 minutes.
- Incorporate the Wine and Tomatoes: Pour in the white wine and add the cherry tomatoes. Cook for an additional 2-3 minutes.
- Combine with Linguine: Add the cooked linguine to the skillet and toss everything gently. Stir in reserved pasta water if needed.
- Finish with Lemon and Parsley: Squeeze lemon juice over the pasta and sprinkle with fresh parsley. Season with salt and pepper to taste.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat on low heat with a splash of water or olive oil.
