- 1 box white cake mix
- 3 large eggs
- 1 cup water (or milk for extra creaminess)
- 1 package (3.4 oz) instant pistachio pudding mix
- 1 cup heavy cream (or coconut cream for dairy-free option)
- 1 cup powdered sugar
- Green food coloring
- Chocolate shavings or sprinkles for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cake mix, eggs, and water. Mix until smooth.
- Pour the batter into a greased 9×13 inch baking dish and bake for about 30 minutes.
- Once cooled for 10 minutes, poke holes all over the cake with a wooden spoon handle or fork.
- In a separate bowl, whisk together the pistachio pudding mix and 2 cups of cold milk until slightly thickened. Pour it over the poked cake.
- Cool completely in the fridge for about 2 hours.
- Beat heavy cream with powdered sugar until soft peaks form, then add green food coloring.
- Spread the whipped cream over the cooled cake.
- Garnish with chocolate shavings or sprinkles.
Notes
Store leftovers in an airtight container for up to 3 days. For a lighter option, substitute Greek yogurt for the heavy cream.
