Ingredients

  • 4 medium Sweet Potatoes, peeled and thinly sliced
  • 1 cup Heavy Cream
  • 1 cup Cheddar Cheese, shredded
  • 2 cloves Garlic, minced
  • 1 tsp Thyme, fresh or dried
  • Salt and Pepper, to taste
  • Butter, for greasing the dish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a medium-sized baking dish with butter.
  3. Thinly slice sweet potatoes — about 1/8 inch thick.
  4. In a bowl, whisk together heavy cream, garlic, thyme, salt, and pepper.
  5. Layer a third of the sweet potato slices in the baking dish, pour a third of the cream mixture over, and sprinkle with cheese. Repeat twice more.
  6. Top with a generous layer of cheese.
  7. Cover with aluminum foil and bake for 25 minutes, then remove the foil and bake for an additional 10-15 minutes until golden brown and bubbly.
  8. Let cool for about 5 minutes before slicing.

Notes

Healthier swaps include using Greek yogurt instead of heavy cream. You can also add seasonal veggies for a colorful twist.
