- 4 medium Sweet Potatoes, peeled and thinly sliced
- 1 cup Heavy Cream
- 1 cup Cheddar Cheese, shredded
- 2 cloves Garlic, minced
- 1 tsp Thyme, fresh or dried
- Salt and Pepper, to taste
- Butter, for greasing the dish
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a medium-sized baking dish with butter.
- Thinly slice sweet potatoes — about 1/8 inch thick.
- In a bowl, whisk together heavy cream, garlic, thyme, salt, and pepper.
- Layer a third of the sweet potato slices in the baking dish, pour a third of the cream mixture over, and sprinkle with cheese. Repeat twice more.
- Top with a generous layer of cheese.
- Cover with aluminum foil and bake for 25 minutes, then remove the foil and bake for an additional 10-15 minutes until golden brown and bubbly.
- Let cool for about 5 minutes before slicing.
Notes
Healthier swaps include using Greek yogurt instead of heavy cream. You can also add seasonal veggies for a colorful twist.
