  • 1 large egg
  • 12 ounces cooked sausage, crumbled
  • 2 cups shredded cheese (cheddar, mozzarella, or a combination)
  • 2 tablespoons chopped fresh herbs (parsley or chives)
  • 1 tablespoon nutritional yeast (optional)

Instructions

  1. Proof the yeast: In a small bowl, whisk warm milk with sugar and yeast. Let sit 5–10 minutes until foamy.
  2. Make the dough: In a large bowl, combine flour and salt. Add the foamy yeast mixture, melted butter, and one egg. Mix until a shaggy dough forms.
  3. Knead: Turn dough onto a lightly floured surface and knead 6–8 minutes until smooth and elastic.
  4. First rise: Place dough in a lightly oiled bowl, cover with a towel, and let rise in a warm spot until doubled, about 1 hour.
  5. Prepare filling: While dough rises, cook and crumble sausage, drain excess fat, and mix with shredded cheese and herbs.
  6. Shape the flowers: Punch down dough and divide into 12 equal pieces. Roll each into a ball and shape into flowers.
  7. Fill and rest: Press the centers of the flowers and spoon sausage and cheese mix into each. Cover and let rest 20 minutes for a final puff.
  8. Egg wash and bake: Preheat oven to 375°F. Beat the remaining egg and brush the tops. Bake 20–25 minutes until golden and cheese is bubbling.
  9. Finish and serve: Let cool slightly before serving. Enjoy the melty cheese and savory sausage pockets.
