- 3 bell peppers (red, yellow, and green)

- 4 cups cooked rice
Instructions
- Prepare the ingredients by slicing the sausages, chopping the bell peppers and onion, and mincing the garlic.
- In a large skillet over medium heat, add the sausage pieces and cook until browned, about 5–7 minutes.
- Add the chopped onion and bell peppers to the skillet and cook for another 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Pour in the diced tomatoes, sprinkle in the Italian seasoning, salt, and pepper, and let it simmer for about 5 minutes.
- Spoon the sausage and peppers mixture over a bed of cooked rice before serving.
Notes
For a healthier version, consider swapping sausage for turkey or chicken and using brown rice or cauliflower rice. You can also add seasonal vegetables like zucchini or mushrooms.
