  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups mixed vegetables
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional toppings: Fresh parsley or shredded cheese

Instructions

  1. In a large skillet over medium heat, add olive oil and allow it to warm. Then, add ground beef, season with salt and pepper, and cook for 5-7 minutes until browned.
  2. Stir in chopped onion and minced garlic to the beef; cook for an additional 2-3 minutes until onions are translucent.
  3. Toss in diced potatoes and sprinkle with paprika; stir to coat.
  4. Fold in mixed vegetables; if using frozen, they’ll need less cooking time.
  5. Cover the pan and cook for 10-15 minutes, stirring occasionally until potatoes are tender and beef is well-seasoned. Uncover for the last few minutes to let potatoes crisp slightly.
  6. Taste and adjust seasonings before serving.
