- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups mixed vegetables
- 1 tablespoon olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional toppings: Fresh parsley or shredded cheese
Instructions
- In a large skillet over medium heat, add olive oil and allow it to warm. Then, add ground beef, season with salt and pepper, and cook for 5-7 minutes until browned.
- Stir in chopped onion and minced garlic to the beef; cook for an additional 2-3 minutes until onions are translucent.
- Toss in diced potatoes and sprinkle with paprika; stir to coat.
- Fold in mixed vegetables; if using frozen, they’ll need less cooking time.
- Cover the pan and cook for 10-15 minutes, stirring occasionally until potatoes are tender and beef is well-seasoned. Uncover for the last few minutes to let potatoes crisp slightly.
- Taste and adjust seasonings before serving.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days or freeze for later. Reheat in a skillet or microwave.
