Ingredients

  • 1.5 pounds boneless chicken thighs or breasts, cut into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 1 large onion, finely chopped
  • 3 minced garlic cloves
  • 1 tablespoon freshly grated ginger
  • 1 can (14 ounces) crushed tomatoes
  • 1 cup heavy cream (or coconut milk)
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. In a large skillet over medium-high heat, melt the butter. Once sizzling, add the chicken pieces and cook until golden brown on all sides, about 5-7 minutes. Remove from skillet and set aside.
  2. In the same skillet, add the chopped onions and sauté until translucent, about 4-5 minutes. Stir in the garlic and ginger, cooking for another minute.
  3. Sprinkle in the garam masala, turmeric, cumin, and chili powder, allowing them to toast for a brief moment.
  4. Pour in the crushed tomatoes, stirring to combine, and bring to a gentle simmer for about 5 minutes.
  5. Lower the heat and stir in the heavy cream. Return the chicken to the skillet, season with salt and pepper, and let it simmer for another 5-10 minutes.
  6. Garnish with fresh cilantro and serve warm.

Notes

For a vegetarian version, substitute chicken with tofu. You can also use Greek yogurt instead of heavy cream for a lighter option.
