- 1.5 pounds boneless chicken thighs or breasts, cut into bite-sized pieces
- 4 tablespoons unsalted butter
- 1 large onion, finely chopped
- 3 minced garlic cloves
- 1 tablespoon freshly grated ginger
- 1 can (14 ounces) crushed tomatoes
- 1 cup heavy cream (or coconut milk)
- 2 teaspoons garam masala
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro leaves for garnish
Instructions
- In a large skillet over medium-high heat, melt the butter. Once sizzling, add the chicken pieces and cook until golden brown on all sides, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add the chopped onions and sauté until translucent, about 4-5 minutes. Stir in the garlic and ginger, cooking for another minute.
- Sprinkle in the garam masala, turmeric, cumin, and chili powder, allowing them to toast for a brief moment.
- Pour in the crushed tomatoes, stirring to combine, and bring to a gentle simmer for about 5 minutes.
- Lower the heat and stir in the heavy cream. Return the chicken to the skillet, season with salt and pepper, and let it simmer for another 5-10 minutes.
- Garnish with fresh cilantro and serve warm.
Notes
For a vegetarian version, substitute chicken with tofu. You can also use Greek yogurt instead of heavy cream for a lighter option.
