- 1 lb (450g) chicken breast
- 1 cup all-purpose flour
- 1 egg
- 1 cup panko breadcrumbs
- Salt and pepper to taste
- 1/2 cup mayonnaise
- 1–2 tablespoons Sriracha
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- Green onions and sesame seeds for garnish
Instructions
- Slice the chicken breasts into bite-sized pieces, about 1 inch thick.
- Set up three shallow bowls: one for the flour, one for the beaten egg, and one for the panko breadcrumbs. Season each with salt and pepper.
- Coat each piece of chicken in flour, then dip in egg, and then coat with panko, pressing to adhere.
- Heat oil in a large skillet over medium heat until shimmering.
- Fry the chicken pieces for 4-5 minutes on each side until golden brown and cooked through.
- While the chicken is frying, whisk together mayonnaise, Sriracha, honey, and rice vinegar until smooth.
- Once chicken is cooked, drain on paper towels, then toss warm chicken in the Bang Bang sauce to coat.
Notes
For healthier swaps, consider air-frying the chicken or using gluten-free breadcrumbs. You can also add diced mango or pineapple for a fresh twist.
