Ingredients

  • 1 lb (450g) chicken breast
  • 1 cup all-purpose flour
  • 1 egg
  • 1 cup panko breadcrumbs
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 12 tablespoons Sriracha
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • Green onions and sesame seeds for garnish

Instructions

  1. Slice the chicken breasts into bite-sized pieces, about 1 inch thick.
  2. Set up three shallow bowls: one for the flour, one for the beaten egg, and one for the panko breadcrumbs. Season each with salt and pepper.
  3. Coat each piece of chicken in flour, then dip in egg, and then coat with panko, pressing to adhere.
  4. Heat oil in a large skillet over medium heat until shimmering.
  5. Fry the chicken pieces for 4-5 minutes on each side until golden brown and cooked through.
  6. While the chicken is frying, whisk together mayonnaise, Sriracha, honey, and rice vinegar until smooth.
  7. Once chicken is cooked, drain on paper towels, then toss warm chicken in the Bang Bang sauce to coat.

Notes

For healthier swaps, consider air-frying the chicken or using gluten-free breadcrumbs. You can also add diced mango or pineapple for a fresh twist.
