- 1 cup pumpkin puree
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 2 tsp pumpkin pie spice
- 1/2 tsp salt
- 1 cup cream cheese frosting (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs until smooth.
- In another bowl, mix the all-purpose flour, baking soda, baking powder, pumpkin pie spice, and salt.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Fill lined cupcake wells about 2/3 full with the batter.
- Bake for 18-20 minutes, until a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
- Once cooled, spread or pipe cream cheese frosting on top and enjoy!
Notes
For a vegan option, substitute eggs with flax eggs. Store leftovers in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator.
