- 1 cup pumpkin puree
- 1 cup vegetable oil

- 8 oz cream cheese, softened

- 4 cups powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 13×18-inch baking sheet or line it with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt until well combined.
- In another bowl, whisk together the pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth and creamy.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
- Spread the batter into the prepared baking sheet, smoothing it out evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before frosting.
- While the cake cools, beat together the cream cheese and butter until smooth. Gradually add in the powdered sugar and milk, mixing until fluffy. Finally, stir in the vanilla extract.
- Once cooled, spread the cream cheese icing generously over the cake.
Notes
For a lighter version, replace some of the oil with applesauce. Add chocolate chips or nuts for an extra crunch!
