- 1 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1 large egg
- 1/4 cup peanut butter
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and nutmeg.
- In another bowl, mix the canned pumpkin, applesauce, honey (or maple syrup), peanut butter, and egg until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Grease or line an 8-inch round cake pan, then pour the mixture in, spreading it evenly.
- Bake for about 20 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool for about 10 minutes before transferring it to a wire rack.
- Optionally, decorate with a light frosting of Greek yogurt and a sprinkle of cinnamon.
Notes
Make it dairy-free by substituting eggs with a flaxseed egg and using non-dairy yogurt for frosting. Consider adding shredded carrots or apples for additional flavor.
