  • 1 cup Pumpkin Puree
  • 2 large Eggs
  • ½ cup Vegetable Oil
  • 8 oz Cream Cheese, softened
  • 2 teaspoons Baking Powder
  • ½ teaspoon Baking Soda
  • 2 teaspoons Pumpkin Pie Spice
  • ½ teaspoon Salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin or line with paper liners.
  3. In a large bowl, whisk together flour, sugar, baking powder, baking soda, pumpkin pie spice, and salt.
  4. In another bowl, beat the eggs and mix with pumpkin puree and vegetable oil until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  6. In a small bowl, mix softened cream cheese with a bit of sugar and pumpkin pie spice until smooth.
  7. Spoon muffin batter into each tin, add a dollop of cream cheese, and cover with more muffin batter until ¾ full.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Allow to cool in the pan for 5 minutes before transferring to a wire rack.
