- 4 medium-sized Potatoes (Russets or Yukon Gold)
- 1/4 cup Fresh Dill, chopped
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 4 cups Chicken or Vegetable Broth
- 1/2 cup Heavy Cream (or Greek yogurt)
- Salt and Pepper to taste
- 2 tablespoons Olive Oil
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Then, stir in the minced garlic.
- Toss in the chopped potatoes and sauté together for another 5 minutes.
- Carefully pour the broth into the pot, bringing it to a gentle boil. Lower the heat and simmer for 15-20 minutes, or until the potatoes are tender.
- Use a handheld immersion blender to puree the soup until smooth, or transfer to a traditional blender in batches.
- Return the blended soup to the pot (if using a traditional blender), and stir in the heavy cream and fresh dill. Season with salt and pepper to taste.
- Allow it to simmer for an additional 5 minutes to meld the flavors.
- Ladle the warm soup into bowls, garnishing with a sprig of dill.
Notes
For a vegan option, substitute heavy cream with coconut milk and vegetable broth. This soup freezes well and can be stored for up to 3 months.
