A bright and creamy salad featuring cucumbers and tangy dressing, perfect for any occasion.


Ingredients

  • 4 medium cucumbers — thinly sliced
  • 1 small red onion — very thinly sliced
  • 1 cup sour cream
  • 2 tablespoons white vinegar or apple cider vinegar
  • 1 teaspoon granulated sugar
  • 2 tablespoons fresh dill — chopped finely
  • Salt and freshly ground black pepper — to taste
  • Optional: 1 teaspoon Dijon mustard

Instructions

  1. Wash and thinly slice the cucumbers. Place them in a large bowl.
  2. Add the thinly sliced red onion to the cucumbers.
  3. Whisk together the sour cream, vinegar, sugar, chopped dill, Dijon mustard if using, and a pinch of salt and pepper in a small bowl.
  4. Pour the dressing over the cucumbers and onions. Toss gently to coat.
  5. Let the salad rest in the refrigerator for at least 10 minutes before serving.

Notes

Best served chilled. For a lighter version, substitute sour cream with Greek yogurt.
