Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup homemade or store-bought basil pesto
  • 2 cups mixed vegetables (zucchini, bell peppers, cherry tomatoes)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat and sear the chicken for about 5 minutes on each side until golden brown.
  4. Add the mixed vegetables around the chicken in the skillet.
  5. Spoon the basil pesto over the chicken and veggies.
  6. Transfer the skillet to the oven and bake for 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  7. Remove from the oven, let cool for a few minutes, and serve hot.
