- 2 boneless, skinless chicken breasts
- 1 cup homemade or store-bought basil pesto
- 2 cups mixed vegetables (zucchini, bell peppers, cherry tomatoes)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper.
- In a large oven-safe skillet, heat the olive oil over medium-high heat and sear the chicken for about 5 minutes on each side until golden brown.
- Add the mixed vegetables around the chicken in the skillet.
- Spoon the basil pesto over the chicken and veggies.
- Transfer the skillet to the oven and bake for 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C).
- Remove from the oven, let cool for a few minutes, and serve hot.
Notes
Serve with a sprinkle of freshly grated Parmesan and a side salad or crusty garlic bread.
