Ingredients

  • 8 ounces spaghetti or fettuccine
  • 4 tablespoons unsalted butter
  • 2 cups fresh spinach
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Boil the Pasta: Bring a large pot of salted water to a rolling boil. Add pasta and cook until al dente. Reserve ½ cup of the pasta water, then drain.
  2. Sauté Garlic: In a skillet over medium heat, melt the butter and add the minced garlic. Sauté for about 1 minute until fragrant.
  3. Add Spinach: Stir in the fresh spinach and cook for about 2-3 minutes until tender.
  4. Combine Pasta and Sauce: Add the drained pasta to the skillet, pour in half of the reserved pasta water, and toss to coat.
  5. Finish with Cheese: Lower the heat, sprinkle in the Parmesan cheese, and add more reserved water if needed for creaminess.
  6. Season to Taste: Adjust seasoning with salt and pepper as desired.

Notes

For added protein, consider including grilled chicken or shrimp. You can also swap cheeses or add seasonal vegetables.
