- 4 salmon fillets (6 ounces each), skin on
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon honey or maple syrup
- 1 teaspoon smoked paprika
- 2 garlic cloves, minced
- Zest and juice of half a lemon
- Salt and freshly ground black pepper, to taste
- Optional: chopped fresh parsley and lemon wedges for serving
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment.
- Pat the salmon dry and place fillets skin-side down on the sheet.
- Whisk together olive oil, Dijon mustard, honey, smoked paprika, minced garlic, lemon zest, and a squeeze of lemon juice until glossy.
- Brush the glaze generously over each fillet. Season with salt and pepper.
- Roast in the preheated oven for 12-15 minutes, or until the salmon flakes easily.
- Remove from the oven and let rest for 2 minutes. Finish with a squeeze of lemon and a sprinkle of parsley. Serve immediately.
Notes
For a little char, place under the broiler for 1 minute at the end — watch closely so it does not burn.
