  • 12 oz (340g) pasta (fettuccine or penne)
  • 4 tbsp unsalted butter
  • 6 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot over medium heat, bring the vegetable broth to a gentle simmer. Add your pasta and cook according to package instructions until al dente, around 8-10 minutes.
  2. Once the pasta is cooked, use a slotted spoon to transfer it to a bowl, reserving the broth. In the same pot, melt the butter over medium heat. Toss in the minced garlic and sauté for about 1 minute until fragrant.
  3. Pour in the reserved vegetable broth along with heavy cream. Stir to combine and allow the mixture to simmer gently until the sauce thickens.
  4. Gradually whisk in the grated Parmesan cheese until melted and the sauce is creamy.
  5. Return the pasta to the pot and mix until well-coated. Season with salt and black pepper.
  6. Garnish with freshly chopped parsley before serving.

Notes

For a healthier option, use whole grain or chickpea pasta. This dish can be made vegan by substituting the butter and cream with plant-based alternatives.
