- 12 oz (340g) pasta (fettuccine or penne)
- 4 tbsp unsalted butter
- 6 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot over medium heat, bring the vegetable broth to a gentle simmer. Add your pasta and cook according to package instructions until al dente, around 8-10 minutes.
- Once the pasta is cooked, use a slotted spoon to transfer it to a bowl, reserving the broth. In the same pot, melt the butter over medium heat. Toss in the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the reserved vegetable broth along with heavy cream. Stir to combine and allow the mixture to simmer gently until the sauce thickens.
- Gradually whisk in the grated Parmesan cheese until melted and the sauce is creamy.
- Return the pasta to the pot and mix until well-coated. Season with salt and black pepper.
- Garnish with freshly chopped parsley before serving.
Notes
For a healthier option, use whole grain or chickpea pasta. This dish can be made vegan by substituting the butter and cream with plant-based alternatives.
