One-Pot Garlic Butter Chicken and Rice

A cozy, comforting dish that brings family together with rich flavors of garlic and butter enveloping tender chicken and fluffy rice.


Ingredients

  • 4 Chicken Thighs or Breasts
  • 1 cup Long-Grain Rice
  • 4 cloves Garlic, minced
  • 3 tablespoons Unsalted Butter
  • 4 cups Chicken Broth
  • 1 Onion, chopped
  • 1/4 cup Fresh Parsley, chopped
  • Salt, to taste
  • Pepper, to taste
  • Optional spices: Paprika or Italian herbs

Instructions

  1. Melt 3 tablespoons of butter in a large pot over medium heat and sauté minced garlic and chopped onions until fragrant.
  2. Season the chicken with salt and pepper, add to the pot, and brown for 5-7 minutes on each side.
  3. Remove chicken, stir in rice, and toast slightly for 1 minute.
  4. Pour in chicken broth, return chicken to pot, cover, and simmer on low heat for 20 minutes.
  5. After cooking, remove from heat, fluff the rice with a fork, and sprinkle with chopped parsley before serving.

Notes

Feel free to add frozen peas, carrots, or spinach for added nutrition. Adjust spices for desired heat.
