- 4 Chicken Thighs or Breasts
- 1 cup Long-Grain Rice
- 4 cloves Garlic, minced
- 3 tablespoons Unsalted Butter
- 4 cups Chicken Broth
- 1 Onion, chopped
- 1/4 cup Fresh Parsley, chopped
- Salt, to taste
- Pepper, to taste
- Optional spices: Paprika or Italian herbs
Instructions
- Melt 3 tablespoons of butter in a large pot over medium heat and sauté minced garlic and chopped onions until fragrant.
- Season the chicken with salt and pepper, add to the pot, and brown for 5-7 minutes on each side.
- Remove chicken, stir in rice, and toast slightly for 1 minute.
- Pour in chicken broth, return chicken to pot, cover, and simmer on low heat for 20 minutes.
- After cooking, remove from heat, fluff the rice with a fork, and sprinkle with chopped parsley before serving.
Notes
Feel free to add frozen peas, carrots, or spinach for added nutrition. Adjust spices for desired heat.
