- 4 cups fresh or frozen spinach

Instructions
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the vegetable or chicken broth and bring to a gentle boil.
- Stir in the pasta, ensuring it is submerged. Reduce heat to low and cover the pot. Cook according to package instructions, typically about 8-10 minutes, stirring occasionally until pasta is al dente.
- Once pasta is cooked, lower heat and stir in the heavy cream. Allow sauce to thicken, then add spinach until wilted.
- Incorporate the grated Parmesan, stirring until melted. Season with salt and pepper to taste.
- Serve warm, garnished with additional Parmesan and fresh herbs if desired.
Notes
For a lighter version, substitute Greek yogurt for heavy cream. Add cooked chicken, shrimp, or tofu for protein. Feel free to experiment with seasonal vegetables and different cheese varieties.
