- 4 servings of pappardelle or pasta of choice
- 2 tbsp butter
- 2–3 cloves garlic, minced
- 2 cups stock or water
- 2 cups milk
- 1 tsp salt (or to taste)
- 150g or 2–3 loose cups of spinach
- 1 cup Parmesan cheese
- 1 cup shredded cheddar cheese (or your favorite cheese)
- Black pepper, to taste
- 1 tsp chili flakes, optional
- 2 tbsp parsley
Instructions
- Melt butter and garlic in a pan over low heat.
- Once butter melts and garlic is fragrant, add the pasta, stock, milk, and salt. Stir to combine and bring to a boil.
- Cook pasta for 7-8 minutes (or per package instructions), stirring occasionally.
- Add spinach and stir until wilted.
- Turn off the heat and add Parmesan, cheddar, black pepper, chili flakes (if using), and parsley. Stir until cheese melts into the sauce.
- Serve immediately.
