- 8 oz penne pasta
- 2 tbsp olive oil
- 1 lb smoked sausage
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 2 tbsp Cajun seasoning
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven over medium heat, add olive oil. Once hot, toss in the sliced smoked sausage. Sauté until browned, about 5 minutes.
- Incorporate the diced onion and bell pepper. Cook for another 3-4 minutes until softened, then add minced garlic.
- Pour in the chicken broth and bring to a gentle boil. Add in the penne pasta, covering it with the liquid. Lower the heat, cover, and simmer for 12-15 minutes, stirring occasionally.
- Once the pasta is tender, stir in the heavy cream and Cajun seasoning.
- Sprinkle in the shredded cheese and stir until melted and creamy. Season with salt and pepper to taste.
Notes
Healthy swaps: Substitute heavy cream for Greek yogurt for a healthier twist. Add spinach or kale towards the end for extra nutrients.
