Ingredients

  • 8 oz penne pasta
  • 2 tbsp olive oil
  • 1 lb smoked sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 tbsp Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven over medium heat, add olive oil. Once hot, toss in the sliced smoked sausage. Sauté until browned, about 5 minutes.
  2. Incorporate the diced onion and bell pepper. Cook for another 3-4 minutes until softened, then add minced garlic.
  3. Pour in the chicken broth and bring to a gentle boil. Add in the penne pasta, covering it with the liquid. Lower the heat, cover, and simmer for 12-15 minutes, stirring occasionally.
  4. Once the pasta is tender, stir in the heavy cream and Cajun seasoning.
  5. Sprinkle in the shredded cheese and stir until melted and creamy. Season with salt and pepper to taste.

Notes

Healthy swaps: Substitute heavy cream for Greek yogurt for a healthier twist. Add spinach or kale towards the end for extra nutrients.
