- 2 tablespoons olive oil
- 4 chicken thighs (bone-in, skin-on)
- 1 medium onion (diced)
- 3 cloves garlic (minced)
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup frozen peas
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add chicken thighs, skin-side down, and brown for about 5 minutes. Flip and brown the other side for another 5 minutes.
- Remove chicken; add diced onion and sauté until translucent, about 3 minutes.
- Stir in minced garlic, followed by the rice, to toast for 1 minute.
- Slowly add chicken broth, stirring in paprika, salt, and pepper. Bring to simmer.
- Return chicken to the pot, cover, and simmer on low for about 15 minutes.
- Add frozen peas, stir, and heat through for an additional 5 minutes.
- Fluff the rice with a fork and serve warm, optionally garnished with fresh herbs.
Notes
Feel free to substitute with boneless chicken or adjust the vegetables based on your preference. Fresh herbs added before serving elevate the freshness.
