Ingredients

1 lb boneless skinless chicken thighs or chicken breasts

1 tablespoon olive oil

1 cup long grain rice

2 cups chicken broth

1/2 cup BBQ sauce

Kosher salt and freshly ground black pepper to taste
Instructions

Heat olive oil in a large skillet over medium heat. Add the chicken and cook until browned on both sides, about 5-7 minutes. Remove the chicken from the skillet and set it aside.

Stir in 1 cup long grain rice and cook for 1-2 minutes until the rice is lightly coated in the juices.

Pour in 2 cups chicken broth and 1/2 cup BBQ sauce. Stir to combine and bring to a simmer.

Cover the skillet and cook on low for 20 minutes, until the rice is tender and the liquid is absorbed.

Remove from heat, let sit for 5 minutes, then fluff the rice.

Serve hot, garnished with fresh parsley if desired.
