- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup heavy whipping cream
- 1 cup fresh strawberries, hulled and sliced
- 2 tablespoons granulated sugar (or to taste)
- 1 teaspoon lemon juice
Instructions
- In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until the texture resembles wet sand. Press mixture into the bottom of two serving dishes.
- In another bowl, beat softened cream cheese until smooth. Gradually add powdered sugar and mix until fully incorporated. Stir in vanilla extract.
- Whip heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture until no streaks remain.
- Spoon cheesecake filling over the crust in serving dishes and refrigerate for at least 60 minutes to set.
- In a small bowl, toss fresh strawberries with sugar and lemon juice. Let sit for about 10 minutes.
- Top the chilled cheesecake with macerated strawberries and optionally garnish with whipped cream and whole strawberries.
