Description

A delightful, nostalgic No-Bake Chocolate Eclair Dessert made with layers of creamy vanilla pudding, graham crackers, and rich chocolate icing. Perfect for any celebration or a cozy night in.


Ingredients

  • 2 (3.4 oz) packages of instant vanilla pudding mix
  • 4 cups cold milk
  • 1 (8 oz) tub of whipped topping
  • 1 box of graham crackers or vanilla wafers
  • 1 cup chocolate icing

Instructions

  1. In a large mixing bowl, whisk together the instant vanilla pudding mix and cold milk until well combined.
  2. Gently fold in the whipped topping until light and fluffy.
  3. In a 9×13 inch dish, place a layer of graham crackers or vanilla wafers on the bottom.
  4. Pour half of the pudding mixture over the layer of crackers, smoothing it out.
  5. Add another layer of graham crackers, followed by the remaining pudding mix, smoothing it out again.
  6. Top with one last layer of crackers, and pour chocolate icing evenly over the top.
  7. Cover with plastic wrap and refrigerate for at least 4 hours or overnight to allow flavors to blend.

Notes

For a lighter version, use reduced-fat pudding mix and whipped topping. Experiment with different pudding flavors for variety.
