- 1 cup all-purpose flour
- 1 cup rolled oats
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup grated carrots
- 1 medium apple, grated
- 1/2 cup shredded coconut
- 1/2 cup walnuts or pecans, chopped
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a large bowl, whisk together the flour, oats, baking soda, cinnamon, salt, brown sugar, and granulated sugar until combined.
- In a separate bowl, whisk the eggs and stir in the oil until blended.
- Add the grated carrots and apple to the wet ingredients, mixing well.
- Pour the wet mixture into the dry ingredients and stir gently until just combined; a few lumps are okay.
- Fold in the shredded coconut and nuts.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Consider using Greek yogurt instead of eggs and oil for a lighter version. Seasonal variations include dried cranberries or swapping apple for banana.
