Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup grated carrots
  • 1 medium apple, grated
  • 1/2 cup shredded coconut
  • 1/2 cup walnuts or pecans, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, whisk together the flour, oats, baking soda, cinnamon, salt, brown sugar, and granulated sugar until combined.
  3. In a separate bowl, whisk the eggs and stir in the oil until blended.
  4. Add the grated carrots and apple to the wet ingredients, mixing well.
  5. Pour the wet mixture into the dry ingredients and stir gently until just combined; a few lumps are okay.
  6. Fold in the shredded coconut and nuts.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Consider using Greek yogurt instead of eggs and oil for a lighter version. Seasonal variations include dried cranberries or swapping apple for banana.
