Ingredients

  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 2 eggs
  • 1 teaspoon mint extract
  • Green food coloring (optional)
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Melt the butter in a saucepan over low heat and then remove from heat.
  3. Stir in sugar, cocoa powder, and eggs until well combined.
  4. Add flour and mix until just combined. Spread brownie batter into the prepared pan.
  5. Bake for 20-25 minutes or until a toothpick comes out with a few moist crumbs.
  6. In a bowl, mix powdered sugar, soft butter, mint extract, and food coloring until smooth.
  7. Spread the mint cream evenly over the cooled brownies.
  8. Refrigerate for at least 30 minutes to set.
  9. Cut into squares and serve.

For a dairy-free option, substitute coconut oil for butter. For a vegan alternative, use flaxseed meal mixed with water instead of eggs.
