- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/2 cup unsalted butter, melted
- 2 eggs
- 1 teaspoon mint extract
- Green food coloring (optional)
- 1 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Melt the butter in a saucepan over low heat and then remove from heat.
- Stir in sugar, cocoa powder, and eggs until well combined.
- Add flour and mix until just combined. Spread brownie batter into the prepared pan.
- Bake for 20-25 minutes or until a toothpick comes out with a few moist crumbs.
- In a bowl, mix powdered sugar, soft butter, mint extract, and food coloring until smooth.
- Spread the mint cream evenly over the cooled brownies.
- Refrigerate for at least 30 minutes to set.
- Cut into squares and serve.
Notes
For a dairy-free option, substitute coconut oil for butter. For a vegan alternative, use flaxseed meal mixed with water instead of eggs.
