  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 package (3.9 oz) chocolate instant pudding mix
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1/2 teaspoon peppermint extract
  • 1 cup chocolate chips
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, cocoa powder, sugar, brown sugar, pudding mix, and salt until well combined.
  3. In a separate bowl, beat the softened butter until creamy. Gradually add the dry ingredients to the butter and mix until integrated.
  4. Add the eggs and peppermint extract into the mixture. Beat until everything is well blended.
  5. Fold in the chocolate chips gently, distributing them evenly throughout the dough.
  6. Using a cookie scoop or tablespoon, drop rounded mounds of dough onto a lined baking tray.
  7. Bake for 12-15 minutes, or until the edges are set but the centers remain soft.
  8. Allow the cookies to cool on the tray for a few minutes before transferring them to a wire rack.

Store in an airtight container at room temperature for up to a week. Freeze the dough for up to 3 months.
