- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 package (3.9 oz) chocolate instant pudding mix
- 1/2 cup butter, softened
- 2 large eggs
- 1/2 teaspoon peppermint extract
- 1 cup chocolate chips
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, cocoa powder, sugar, brown sugar, pudding mix, and salt until well combined.
- In a separate bowl, beat the softened butter until creamy. Gradually add the dry ingredients to the butter and mix until integrated.
- Add the eggs and peppermint extract into the mixture. Beat until everything is well blended.
- Fold in the chocolate chips gently, distributing them evenly throughout the dough.
- Using a cookie scoop or tablespoon, drop rounded mounds of dough onto a lined baking tray.
- Bake for 12-15 minutes, or until the edges are set but the centers remain soft.
- Allow the cookies to cool on the tray for a few minutes before transferring them to a wire rack.
Notes
Store in an airtight container at room temperature for up to a week. Freeze the dough for up to 3 months.
