- 1 cup Unsalted Peanuts
- 1 cup Granulated Sugar
- 1/2 cup Light Corn Syrup
- 2 tablespoons Butter
- 1 teaspoon Vanilla Extract
- 1 teaspoon Baking Soda
- Salt (optional, to taste)
Instructions
- Grease a large microwave-safe plate or baking sheet.
- In a large glass bowl, combine the sugar and corn syrup. Stir until fully blended.
- Heat the mixture in the microwave for about 4 to 5 minutes, stirring halfway through.
- Carefully stir in the peanuts and butter. Mix well.
- Return the bowl to the microwave and cook for another 2 to 3 minutes until bubbly and golden.
- Remove the bowl from the microwave and quickly stir in the baking soda and vanilla.
- Pour the mixture onto the prepared plate and spread it out evenly.
- Allow it to cool completely for about 30 minutes before breaking it into pieces.
Notes
Store in an airtight container at room temperature for up to two weeks. Consider freezing for longer storage.
