Ingredients

  • 1 cup Grape tomatoes, halved
  • 4 cups Assorted green leaves, packed
  • 2 cups Canned marinated artichoke hearts, cut into halves
  • 1/4 cup Capers
  • 1/4 cup Red onions, thinly sliced
  • 3 Tbsp Extra virgin olive oil
  • 1 Tbsp White wine vinegar
  • 3 cloves Garlic, roasted and mashed
  • 1/4 cup Dill, finely chopped
  • 1/2 tsp Dried oregano
  • Pinch Crushed red pepper flakes
  • 1/2 tsp Sea salt
  • 1/2 tsp Ground black pepper

Instructions

  1. In a large bowl, combine all the salad ingredients: grape tomatoes, assorted greens, marinated artichoke hearts, capers, and red onions.
  2. In a small bowl, whisk together the dressing ingredients: olive oil, white wine vinegar, roasted garlic, dill, oregano, crushed red pepper flakes, sea salt, and black pepper until well combined.
  3. Drizzle the dressing over the salad and toss to coat everything lightly.
  4. Taste your salad and adjust the seasoning with more salt and pepper if desired.
  5. If not serving right away, whisk the vinaigrette again before serving.

Notes

For added flavor, let the salad rest for 15-20 minutes after dressing. Optional: add Dijon mustard and honey to the dressing for creaminess.
