- 1 cup Grape tomatoes, halved
- 4 cups Assorted green leaves, packed
- 2 cups Canned marinated artichoke hearts, cut into halves
- 1/4 cup Capers
- 1/4 cup Red onions, thinly sliced
- 3 Tbsp Extra virgin olive oil
- 1 Tbsp White wine vinegar
- 3 cloves Garlic, roasted and mashed
- 1/4 cup Dill, finely chopped
- 1/2 tsp Dried oregano
- Pinch Crushed red pepper flakes
- 1/2 tsp Sea salt
- 1/2 tsp Ground black pepper
Instructions
- In a large bowl, combine all the salad ingredients: grape tomatoes, assorted greens, marinated artichoke hearts, capers, and red onions.
- In a small bowl, whisk together the dressing ingredients: olive oil, white wine vinegar, roasted garlic, dill, oregano, crushed red pepper flakes, sea salt, and black pepper until well combined.
- Drizzle the dressing over the salad and toss to coat everything lightly.
- Taste your salad and adjust the seasoning with more salt and pepper if desired.
- If not serving right away, whisk the vinaigrette again before serving.
Notes
For added flavor, let the salad rest for 15-20 minutes after dressing. Optional: add Dijon mustard and honey to the dressing for creaminess.
