Ingredients

- 1 pound ground beef (or turkey)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 large egg
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cups chicken broth
- 1 cup orzo pasta
- Fresh parsley for garnish
Instructions
- In a large bowl, combine the ground meat, breadcrumbs, Parmesan, minced garlic, egg, salt, and pepper. Mix until just combined.
- Shape the mixture into 1-inch meatballs and set aside on a plate.
- Heat olive oil in a large skillet over medium heat. Add the meatballs in batches and sear them for about 5 minutes or until golden brown.
- Once browned, carefully pour in the chicken broth and bring to a gentle simmer.
- Stir in the orzo and cover the skillet, cooking for about 10-12 minutes until the orzo is tender and most of the liquid is absorbed.
- Garnish with fresh parsley before serving.
Notes
Leftovers can be stored in an airtight container for up to 3 days. Freeze portions for up to 3 months.
