Ingredients

  • 1 pound ground beef (or turkey)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 large egg
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups chicken broth
  • 1 cup orzo pasta
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, combine the ground meat, breadcrumbs, Parmesan, minced garlic, egg, salt, and pepper. Mix until just combined.
  2. Shape the mixture into 1-inch meatballs and set aside on a plate.
  3. Heat olive oil in a large skillet over medium heat. Add the meatballs in batches and sear them for about 5 minutes or until golden brown.
  4. Once browned, carefully pour in the chicken broth and bring to a gentle simmer.
  5. Stir in the orzo and cover the skillet, cooking for about 10-12 minutes until the orzo is tender and most of the liquid is absorbed.
  6. Garnish with fresh parsley before serving.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Freeze portions for up to 3 months.
