- 1 lb boneless, skinless chicken breasts
- Salt and pepper
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- ½ cup grated Parmesan cheese
- 8 oz fettuccine or preferred pasta
- Fresh basil for garnish
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat. Sear the chicken breasts for 5-7 minutes per side until golden brown.
- Remove the chicken and sauté minced garlic in the same pan for about 30 seconds.
- Add cherry tomatoes and heavy cream, simmering for 3-5 minutes.
- Stir in Italian seasoning and grated Parmesan until melted.
- Cook pasta according to package directions and drain.
- Slice chicken and return to skillet with cooked pasta, tossing to coat.
- Garnish with fresh basil before serving.
Notes
You can use Greek yogurt and chicken broth as a lighter substitute for heavy cream.
