- 2 chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 8 ounces pasta (fettuccine or penne)
- Fresh basil leaves for garnish
Instructions
- In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, saving a bit of pasta water.
- Season the chicken breasts generously with salt and pepper. Heat olive oil over medium-high heat in a large skillet and add the chicken. Cook for about 5-6 minutes on each side or until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the diced tomatoes and heavy cream, stirring to combine. Allow to simmer for 3-4 minutes until it thickens slightly.
- Stir in the Parmesan cheese and Italian seasoning. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
- Cut the seared chicken into slices and return it to the skillet. Add cooked pasta, tossing everything together for about 2 minutes.
- Plate the pasta and garnish with fresh basil leaves. Serve and enjoy!
Notes
Rest the chicken before slicing to retain juices. Add fresh herbs at the end of cooking for bright flavors.
