- 2 boneless, skinless Chicken Breasts
- Salt and Pepper
- 2 tbsp Olive Oil
- 4 cloves Fresh Garlic, minced
- 1 tsp Crushed Red Pepper Flakes
- 1 cup Chicken Broth
- 1 cup Heavy Cream
- ½ cup Parmesan Cheese, grated
- ½ cup Sun-Dried Tomatoes, chopped
- ½ cup Fresh Basil, chopped
- 8 oz Pasta (fettuccine or your choice)
Instructions
- Rub the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat and add the chicken breasts. Cook for 6-7 minutes per side until golden and cooked through. Remove and set aside.
- Add minced garlic and crushed red pepper flakes to the same skillet and sauté for about 1 minute until fragrant.
- Pour in the chicken broth, scraping up any browned bits from the pan. Let it simmer for 2-3 minutes.
- Reduce heat to low and stir in heavy cream and Parmesan cheese. Allow to thicken for about 3-4 minutes, stirring occasionally.
- Return the chicken to the pan to coat it with the sauce.
- Cook the pasta according to package instructions. Reserve a cup of pasta water, then drain.
- Toss the cooked pasta into the skillet with the chicken and sauce. Adjust consistency with reserved pasta water. Add sun-dried tomatoes and fresh basil right before serving.
Notes
For a healthier option, swap heavy cream for Greek yogurt. Add fresh basil at the end for maximum flavor.
