- 1 ripe mango, peeled and diced

Instructions
- In a mixing bowl, whisk together the coconut milk, chia seeds, maple syrup, and vanilla extract until well combined.
- Cover the bowl and refrigerate for at least 2 hours or overnight.
- While waiting, peel and dice the ripe mango.
- Once the pudding has set, stir it and layer it into bowls or jars with fresh mango pieces.
- Sprinkle coconut flakes on top for added texture and flavor.
Notes
For variations, you can use almond milk instead of coconut milk or add protein powder for an extra boost.
