Light, crunchy, and utterly satisfying zucchini fries made in an air fryer for a healthy twist on a classic favorite.

- 3 medium zucchini, cut into 3-inch sticks
- 1 large egg, beaten
- 1 cup panko breadcrumbs
- 1/2 cup finely grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika (optional)
- Salt and freshly ground black pepper to taste
- Olive oil spray or cooking oil spray
Instructions
- Prepare the zucchini: Wash and dry the zucchini, then cut off the ends. Slice into 3-inch sticks about 1/2 inch thick.
- Set up a dredging station: In one bowl beat the egg; in a second bowl mix panko, Parmesan, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Dredge each zucchini stick: Dip into the egg, then press into the panko mixture so each fry is well coated.
- Preheat the air fryer to 400°F (200°C) for 3–4 minutes.
- Arrange in the air fryer: Lightly spray the basket with oil, then place zucchini fries in a single layer.
- Air fry for 6–8 minutes, flip, spray lightly, and cook another 4–7 minutes until golden and crisp.
- Rest briefly on a wire rack for 1–2 minutes before serving.
Notes
For extra crunch, double-coat the fries. You can also substitute Greek yogurt for sour cream in the dipping sauce for a tangy twist.
