Instructions
- Begin with either leftover mashed potatoes or make a fresh batch. Ensure they are smooth and creamy. Add salt and pepper to enhance the flavor right from the start.
- In a large mixing bowl, combine the mashed potatoes, shredded cheese, bacon bits, sour cream, green onions, and eggs. Mix well until all ingredients are thoroughly blended.
- Using a spoon or your hands, scoop out a small amount of the mixture and roll it into a ball, roughly the size of a golf ball.
- Roll each potato ball in seasoned breadcrumbs, ensuring they’re evenly coated.
- Place the puffs on a baking sheet lined with parchment paper. Bake in a preheated oven at 375°F (190°C) for 25-30 minutes or until they are golden brown and crispy.
