Description

A delicious twist on the classic mashed potatoes, these loaded mashed potato puffs blend a creamy interior with a crispy exterior, making them a perfect appetizer or side dish for any occasion.

Ingredients

Scale
  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon bits (optional)
  • 1/4 cup sour cream
  • 1/4 cup chopped green onions
  • 2 large eggs
  • 1 cup seasoned breadcrumbs
  • Salt and pepper, to taste

Instructions

  1. Begin with either leftover mashed potatoes or make a fresh batch. Ensure they are smooth and creamy. Add salt and pepper to enhance the flavor right from the start.
  2. In a large mixing bowl, combine the mashed potatoes, shredded cheese, bacon bits, sour cream, green onions, and eggs. Mix well until all ingredients are thoroughly blended.
  3. Using a spoon or your hands, scoop out a small amount of the mixture and roll it into a ball, roughly the size of a golf ball.
  4. Roll each potato ball in seasoned breadcrumbs, ensuring they’re evenly coated.
  5. Place the puffs on a baking sheet lined with parchment paper. Bake in a preheated oven at 375°F (190°C) for 25-30 minutes or until they are golden brown and crispy.
  6. Let the loaded mashed potato puffs cool for a few minutes before serving. They’re best enjoyed warm.

Notes

Serve with additional green onions or a drizzle of sriracha for a spicy kick. Store leftovers in an airtight container in the refrigerator for up to 3 days.
